Has anyone done this? I've tried searching the forum, google has some stuff but I'd like to know if it can be restored to specifically NZ firmware. I have a Samsung guy myself so I'm used to Sammobile and odin etc, not to sure what to do with the HTC. Its a friends phone who bought it second hand but it came with cyanogenmod

Yes. XDA will be your friend. I have the M7 and had flashed a custom rom and now have it back on the stock NZ ROM. The caveat is though that my phone has always been S-On and the ROMs I flashed were Sense based. I haven't tried a Cyanogen rom on the M7.
The M7 Australian Users thread on XDA has links to the appropriate nandroids to allow restoring to stock. Certainly that's what I did when I needed to return mine for a warranty repair.
