I have a Chinese purchased Huawei Mate 9 Pro,

It has the LON-AL00, and I wanted to know can I replace/overwrite it with the NZ one LON-L29?

I have removed alot of the bloated programs , but sometimes something pops in Chinese and i dont know what its for.

thanks in advance

Short answer: Yes, but.

Long answer: Yes, but you will need to either use a paid service called FunkyHuawei to rebrand your device, or unlock your device's bootloader and do a lot of reading on xda-developers. It is a reasonably involved process due to the way Huawei authenticates and verifies updates on their latest models.
