I am wanting to connect my Android (usb-c) phone to a dock so that I can use it with two monitors and a standard keyboard and mouse. Is this possible?

I sometimes use my Huawei P30 Pro (and Mate 20 Pro before that) with a USB-C to HDMI cable. I am not sure a dock functionality with multiple monitoes would be supported though.

Is your phone a Samsung?

Look into Samsung Dex.

Yes, saw these but if I am reading correctly, they only appear to support a single display.

Ahh ok. If that can't do it I would be surprised if anything can.

I think generally to do multiple monitors off a single usb-c port it has to be a thunderbolt port doesn't it? Or maybe it's possible at lower resolutions / refresh rate / colour depth

Any reason you need to do this? Some kind of casting may be a better fit.

I am looking to use a Samsung tablet for my main device and then rdp into a VDI when I need any processing grunt or special windows Application. I can find a device that will allow me to connect one monitor but not two (I did see a youtube video showing it was possible but the device no longer seems to be available).
