I have just upgraded my GT540 to 2.1 and all seems good so I thought I'd save a few of you the hassle of trawling for various links on how to do it.
OK first of all download LG PC Suite if you already haven't from the LG site :

You will end up installing the LG updater and then when you connect your phone it will say there are no updates for the phone but you have the option to download the PC Suite software - called something sync - can't remember the name but its the link above the user manual link.
Run that program, connect your phone and make a backup.
Next backup your apps using the Free Astro backup from the android market as outlined here in Step 2 :

Now download the kdz file that has 2.1 in it from here (don't worry about it being in Russion - it works) :

Now download the installer for this here and extract to a folder:

After making sure you phone is plugged in follow the installation instructions here and in a few minutes you'll be running 2.1 ! :

Now reinstall your backed up apps using Astro again by downloading Astro from the market again and following Step 5 in the note here :
