My previous phone was a Nokia XpressMusic 5800 and Symbian had a great and simple way of organising images into folders in the gallery.

One thing I really dislike about my Galaxy S is that all the images on my phone get lumped into the Gallery and there's album art, images used by apps and widgets plus my photos all jumbled in there. I have tried googling for an Android image organising app but there doesn't seem to be one, except for apps that can hide some images so that they can't be seen unless a password is entered. That's not what I am looking for.

 This situation seems ridiculous - am I missing something here?

You can keep images out of the gallery by putting a file called ".nomedia" in the directory containing the images. There are apps to do this e.g. http://www.appbrain.com/app/studiokuma-nomedia-manager/com.studiokuma.nomedia . Also album art files need to be named albumart.jpg, then they won't be picked up by the media scanner.

Try the "JustPictures" app. It's pretty good. You have a bit more control. 

It lets you exclude folders by adding a file called ".nomedia" to that folder. 

For organising photos you really need to use a File Manager - preferably one that support thumbnails, like AndroZip or Estrongs File Explorer.
