I have been reading here and other places that the Froyo update for the SGS is coming out on the 12th of this month, yet apparently Gingerbread is being released US 11th Nov. Why not skip Froyo altogether and just have the SGS and other phones updated to Gingerbread?

I don't recall seeing any discussions saying that Gingerbread was coming to Galaxy S.

Sometimes I just sit and think. Other times I just sit.

I didn't say there was a discussion about Gingerbread coming to the SGS. But surely the SGS would be able to handle (so to speak) Gingerbread.

I suspect many phones will get Gingerbread first via alternate ROMs like CyanogenMod.

So far, no one really knows what is in Gingerbread or what it looks like. The Android SDK update for it still has not been released. This may be what is going to be announced soon.

Because then you'll be waiting as long as you have, again. I assume there's only a small-ish team working on the update, and to iron out all the bugs would take a long time. As opposed to an open source project such as a third party ROM has the benefit of a thousand developers, and can roll it out in weeks, not months.
