I thought I would briefly share my experience of flashing and rooting my x10 mini pro
I did a couple of boo boo's so I thought if I let you know I could help someone else avoid a few hours of pain!
First up, my philosophy was to get my x10 running mint with 2.1 and rooted to remove the crappy SE factory apps out of my home screen
So firstly, I flashed my x10 mini pro with Singapore 2.1 firmware. It's very easy. I got the software from XDA at this link:

Note, you MUST select "y" to "wipe user data" so make sure you've backed up first!
A quick note on backup, if you have synchronisation enabled for your contacts (to gmail), you don't need to back them up. In the end (on third time around) I realised I only wanted the backup of my SMSs and call log - I didn't want settings backed up as I wanted to start from a clean slate (and re-enter settings manually)
Flash was easy, and Singapore firmware is perfectly fine with no disadvantages for NZ
Second thing I did was root the phone using this XDA tool:

It usually does take at least a couple of goes. This was my process:
- enable USB debugging on phone
- run prog as administrator
- connect phone, click "Root"
If it loops around "rageagainstthecage" for >5 mins I would disconnect it and try again.
After a couple of goes it went through the rooting process up to "Installing Superuser.apk" where it would hang. I waited for a few mins, then did the "untick and re-tick USB debugging" Then it said "Finished"
Don't do the root test - it didn't work for me.
Go into the market and download Titanium Backup ROOT.
Open it - it will say "device is not rooted" but ignore it and click "Problems?"
It will install Busybox and then it should say that your phone is rooted - success!
Quick intermediate but important step - entering the APN settings for mobile data, I followed these settings: http://www.geekzone.co.nz/forums.asp?forumid=97&topicid=67440
OK, now the main purpose of rooting the phone was to get rid of crapware (which we do via Titanium backup).
At first I got a bit to enthusiastic and removed some apps I shouldn't have and "broke" my phone. So here's a list of the apps I now have uninstalled and phone is running without problems:
Email (NOTE: DON'T DELETE THE GMAIL APP - THIS IS ESSENTIAL)
Timescape
PlayNow
CA Gold (in SG firmware)
Peggle (in SG firmware)
Roller Coaster (in SG firmware)
Sync (NOTE: ONLY THE ONE WITH THE SE SYNC LOGO - DON'T DELETE ANY OTHER SYNC SERVICES)
Messaging
Music Player
Contacts
Calls
RoadSync
User Guide
User Support (?? remembering that from the top of my head)
Apps that you SHOULD NOT remove include:
Gmail
Gtalk and Talk
Setup Wizard
These are ones that I uninstalled and then broke my phone :-( (the andriod market no longer worked).
Now I have a clean, sweet running x10 mini pro!
Disclaimer: I take NO responsibility if you accidentally break your phone following this guide etc.
Just as a note, the apps I used to replace the removed ones are:
Handcent (SMS)
aContacts (contacts and calls/dialer)
K-9 Mail (email)
Meridian (music player)
Opera Mini (even though I didn't uninstall the factory browser)
