As mentioned above...

I have spent a couple of hours trying to figure out how to get this all up and running.

Issues:
-Cant find a 'superboot' download.
-Im running a Mac and have little knowledge of the basic operating of a Mac required to install superboot and the likes.
-I just cant find a clear step by step guide that would make the whole thing more painless than it currently is.

Any ideas, help or guidance?

Just follow instructions here, all you need to do is copy the zip files onto your SD card in the phone so it's pretty irrelevant what OS is on your PC/Mac

They are the directions I keep coming back to.  I don't quite understand step 1. i.e. Flash a recovery image (tested with AmonRA.)
What is this actually directing me to do.  When I start to go further down the rabbit hole of using AmonRa it talks about 'Superbooting' the phone and other things.  So step one is where Im really not sure what processes to follow.

It has step by step instructions:

How to install - Windows, Linux and OSX

* Download the recovery image of your choice above and extract the zip file
* Put your device in bootloader mode - turn if off, then tap the powerbutton while holding the 'Volume Down' and 'End (Red)' keys
* MAC - Open a terminal window to the directory containing the files, and type 'chmod +x install-recovery-mac.sh' followed by './install-recovery-mac.sh'

That bit just backs up your current phone, you then copy the Teapot ROM zip file onto your SD Card and follow the steps, easy

Just install it the same way you did the ROM. Boot into recovery and select Flash update from zip and use the zip file that you copied onto the SD card for OCing
