My SGS is running stock 2.2.1 XXJPY. I have been reluctant to root the phone partly through fear of the unknown and also because, particularly following the recent Froyo update via Kies a few days ago , I am very happy with the phone's performance in repect of lag, GPS, battery life etc.

However I am keen to get rid of a lot of the crap that came preloaded on the phone eg Aldiko eBook, Allshare, Samsung Widgets etc etc, all of which I never use. My understanding is that I need to root the phone to do this and I would be grateful to see a simple set of instructions for the best and safest way to root the phone and how to delete the unwanted apps. TIA.

One of the easiest is z4root from the market.
But only worked for me on 2.1 stock.
Since my recent update to 2.2 via kies to  build number Froyo.SRJP3 z4root does not work (its easy one click root)
Worth a try as it either works or not... if it doesn't work a reboot and nothing changed.

Been reading up on it and appears another trusted method is http://forum.xda-developers.com/showthread.php?t=788108
chainfires method but I need to find a suitable fixed pda rom to flash.
Not much bloatware  imho , as it does not seem to interfere with the standard workings so I have not worried removing any of it at this stage.

I've used these instructions to root - http://theunlockr.com/2010/10/11/how-to-root-your-android-phone-superoneclick-method/

As for removing the bloatware, you can either run a custom rom, which basically removes all the stuff you don't need, or get a Root Explorer off the market and delete the files you don't require from your system. The later is not so safe imo, because you need to know what you're deleting. 

If you really want that bloatware off your phone, then I would just root your phone, install the ClockWorkRecovery, back up your existing ROM and then start flashing custom ROMs. If something goes wrong, you can always go back to your original ROM via CWR.

The other option is to get Voodoo lagfix, then get the Superuser app off the market (which basically roots your phone). With this option you will have a lagfixed phone, with root and recovery 2e (or CWR), which will allow you back up your existing ROM and flash unsigned .zip files (mods, themes and custom ROMs).

An easy option if you are not keen to root your phone is to try a different launcher. I'm using LauncherPro and it has the option (Preferences->General Settings-> Hidden Apps) to hide any apps you don't want to see.

This means you can get "rid" of the bloatware, while still having everything installed, should that be needed for future upgrades, etc.

Thanks Loftus - this does sound like me. Not really enthused enough to get into "flashing custom ROMs" etc. Will give LauncherPro a go.

When I used the word 'bloatware' in the OP I guess I really meant "irrelevant and visually polluting apps that clog up my screens" rather than stuff that clog up the system performance due to their size.
