Dude, a 5" screen device against your head is not a phone, its a mini microwave. Not to mention trying to fit the device in your pocket and not attracting unwanted attentions.
For note taking i find a qwerty keyboard, like my Bold, is very good if you don't like touchscreen. Do you really need a large screen for taking notes? You might want to breakdown the things you do with the device and how often. For example, in frequent functions can be done on a secondary device, like a netbook, so you don't have to carry it on you all the time.
The HTC Windows Mobile series devices, HTC HD Touch etc..., will offer close to what you need, except for 5" inch screen. btw, stylus and handwriting recognition are a thing of the past. Touch and muli-touch, and eventually gesture and voice based input, are all the rage now.
Dont let the marketing hype hit you too hard.... Both stylus and handwriting recognition are big movers in certain circles, just not the uninformed consumer market. How does touch and multi touch negate the need for those?
