There is a good Auckland Meetup that gives ideas for vegetarian recipes.  

This is one for the June Meetup I went too, it's very easy,  tasty and filling.

I keep ginger in the freezer and grate it as required.
African Stew
Ingredients
2 thumbs ginger 2 carrots 2 celery sticks 2 bay leaves 1/2 teaspoon cayenne pepper (or can use chillies powder) 3 large sweet potatoes (cut in small pieces) a quarter of cabbage a good handful of PARSLEY 2 cans tomatoes 1/2 jar peanut butter 3 cups of water or vegetable broth  

Method 1. Fry ginger with spices 2. Add celery, carrot, bay leafs and parsley 3. Add the sweet potatoes and tomatoes. Let cook, slowly add in water or vegetable broth (please control how "juicy" you like). 4. When sweet potatoes are done, add in the cabbage. 5. Add peanut butter before serving.

I am not vegetarian for health reasons (I just don't like meat) but every bit of scientific evidence on the subject says I will live a lot longer than you and also have a less horrible death. Enjoy it while you can. Bowel cancer and heart disease are racing each other to do you in.

We are not vegetarians however we do limit meat intake. We would eat red meat no more than once a week but would average once a fortnight. White meats we eat in moderation and fish we eat often. Mostly we have  Salads and pasta dishes and green currys.




Here is a crazy notion, lets give peace a chance.

I'm trying to think of things carnivores might enjoy. That is why I cook with meat substitutes since I am the only vegetarian in my circle. Another item that seems to satisfy meat cravings for a lot of people is mushrooms, the big portobello gourmet variety. You can do a lot with them but just chopping them up and frying them as part of a meal also works.

I hate meat substitutes or for want of a better term imitation meat. If I don't fancy eating meat which is often (very light eater) I just don't eat meat and will stick with fruit and veg in its natural state.

As a kid I HATED mushrooms, now I'll eat them with anything. I LOVE THEM.

We have had a couple of meals where kids have been selling field mushrooms on the side of the road, they collected from paddocks, and for $5 you get two generous meals. 

Sauteed in Butter, with Thyme and a little Cream at the end, on Molenberg or Vogels buttered toast. God my mouth is watering.

We also cook large portobellos with the stalk removed then flip them upside down, pour good quality balsamic in the middle, and then grill in the oven with a little cheese on top!

I put eggs with beans in tacos. I take maybe 2 eggs, 30g cheese, salt, and some of that taco seasoning mix, I fry it hot until the eggs are solid. Then I add 1/3 to 1/2 a can of chilli beans, Delmaine are my favorite but watties hot chilli are easier to get, and fry them up with it. That's one of my favorite meals, by itself, without the taco seasoning usually - it makes a great high protein, moderate carb meal.

Mushrooms are indeed a good meat-like product; mushroom stroganoff with brown rice is a great filling winter meal; mushrooms with pasta is a classic (and using smoked praprika as a smokey flavour for a bacon substitute), as are portabello mushrooms grilled (oven or bbq) with some smoked praprika and feta.

For those wanting a more meat-like experience but without going down the 'fake meat' route, brown lentils make a pretty damn tasty cottage pie (the kind with a potato top covered with chese). My wife rates this as one of her favourite meals (and she's a meat-eater!).

Asian cooking is big on the fake meat, which is logical I guess for some groups like Buddhists who are vegetarian for religious reasons. My local Asian food supplier (Davis Trading in PN) has a decent range of fake chicken, duck, mince etc, if that's what one is into - though I don't buy this as it creaps me out a bit! There's a fantastic vegetarian restaurant in Wellington called Aunty Meena's (Cuba St), which does this kind of stuff (I go there for the amazing laksa), and a similar restaurant in Lower Hutt opposite Pak 'n' Save.

We regularly make vegetarian sausages; they are really tasty but a celiac's nightmare as their main ingredient is gluten. They're also really cheap to make as the gluten is less than $10 a kg, and a 1kg bag would make probably 50-75 sausages. They're nicer than the bought ones, and make a fantastic toad in the hole.

Other 'fake' meats include Quorn, which is available from most supermarkets; it's pretty expensive, though, so I rarely buy it. We would tend to use gluten for sausages or burgers, or tofu. Unlike that classy poster who had his post removed, I love tofu. Sure, its taste is subtle, but it's delish. Use it in stirfries, fried rice, burgers (along with a nut like peanuts or walnuts), laksa... our kids don't like it, however!

I consider myself a very "open" eater, there are very few things I will not eat. One is Tofu and the other is olives. No matter how many types or whatever I have tried, I can't stand either. Strangely I LOVE olive OIL, consider myself a bit of a connoisseur. Even when I was in Italy despite being told 100 times someone could find me an olive "that even olive haters love" I didn't find a single one that didn't make me want to spit out.

I love fried capers.

Beans are a big item with all vegetarians and they are a super-food for everyone. I eat lots of beans in all their different forms. For tacos I use Delmaine's Black Beans in Chilli Sauce, which make a perfect filling, along with corn, onion, bell pepper and the mince substitute described above. I top this off with lettuce, tomato, avocado, grated cheese, wrap in foil and bake in the oven for 20 minutes.

The only tofu that I'll cook and eat myself is bean supreme tofu, really great stuff. Plain tofu is awful, unless it's in a strongly flavored sauce and deep fried. Countdown has it.
