Hi There!

In honour of this, I thought it would be cool for people to post their favourite vegetarian recipe here. I am a self confessed meat addict, but I am prepared to give vegetarian meals a crack if they are genuinely tasty. I'd like to see if I could get down to meat 5 days a week in our household.

For the sake of the thread, could we please not have any judgmental or negative comments posted in regard to pro meat or pro vegetarian diets/people etc.

Just the recipes along with commentary on how it's best prepared or anything that might accompany it.

This is a good initiative. One of my favourite things is just that, not even a recipe. Just take a kumura, wrap in aluminium foil, bake at high temperature for a half-hour or so until a fork goes through, smother in butter or margarine, serve with fresh-ground pepper.

I rather have meat in all my meals but sometimes... Try an eggplant parmigiana.

I had a tolerable tomato pasta thing without meat in it.

But I will not be supporting such a silly day.

Macaroni and Cheese/Substitute the macaroni for layers of sliced potatoes and vegetables
Cottage Pie (with Ricotta cheese and Spinach)/Or make a ricotta lasagne
Fish Pie (I classify seafood as a meat dish - but it makes a good substitute if just cutting down on red meat/pork)
Sweet Potato Salad
Risotto
Pasta Bolognese (and you can substitute the meat for something else)
Seafood Bisque
White Asparagus Salad
Poached Eggs on Spinach with Hollandaise sauce
Quiche (make own pastry)
Pizza (make own dough)
Steamed Red Mullet (or any fish)
Ragout of Chestnuts, Shallots and Parsnips

All of the above probably take only 15 to 20 minutes to do.

Note: I didn't post the recipes as they are probably quite common on google, also most use the same basic ingredients, the trick is really in getting the preparation done before the cooking.

I'm ovo lacto vege, I lift a lot of weights so I eat a lot of eggs, some tofu, and protein powder. Indian food with paneer (Indian cottage cheese) is probably my favorite vege food. If you mean strict vege... well I put dairy in most things.

Nice to see another actual vegetarian here. I had a feeling there wouldn't be many of us. I also do dairy, though, so the vegans will throw their arms up in horror (I'm sure there are NONE of those here). I can't get enough cheese. It really does make everything better, much more so than butter.

Make that a third... I'm also lacto-ovo (which I consider 'vegetarian')...

Not surprising to see, despite the OP saying asking people avoid making "judgemental or negative comments", many of the posts thus far fall straight into this trap! Sad but inevitable, apparently. (Same sh!t happened on a thread here about a year ago; knocking vegetarianism is an NZ pastime.)

Hard to know where to start with recommended vegetarian food as it's my every-day diet, but for an example we had a great potluck meal with friends yesterday which included:

* asparagus and capsicum quiche (first asparagus of the seasons - yay!)
* brown rice salad (delish - with a citrus tang thanks to lemon rind)
* a millet, haloumi and roast beetroot salad (first time in ages I've had millet, but it was great - made by and for a person with celiac disease)

And mentioning asparagus reminds me of my favourite summer salad - char-grilled asparagus and capsicum with feta and almonds on a bed of rocket. Oh, and also our current favourite which is  similar, but based around roasted yams with chilli and lemon rind/juice (also with feta and almonds). Even better for either of these salads is serving them with ciabata rolls with butter toasted on the tawa (Indian frypan used for cooking roti).

A weekly staple in our house are buritos (or tacos), a meal that's really popular with our boys - this sort of food's easy to do vegetarian. We just make up a full slow cooker of beans (kidney or pinto), accompanied with onions, spices, carrots, canned tomatoes etc, then freeze it in meal-sized lots. It's great with liquid smoke in it, but even better with chipotle (add this in later as the kids won't have it hot). Serve that in tortilla or tacos with guacamole (with corriander and red onion), capsicum, carrot, cheese etc. Hard to beat! 

I totally support carnivores giving vege food a go - but they need to leave their prejuduces at the door when doing so. Easier said than done, as shown by the comments above...

I also make very good vegie tacos. A lot of meat substitutes are ok in their own right, but not as meat substitutes. I have found that the Sanitarium vegetarian hamburgers sold at New World work well with anything that would normally require mince. Note to carnivores: 'meat substitute' does not mean we are missing meat. It just works better in certain recipes. I have been a non-meat eater for most of my fairly long life and I certainly don't miss it at all. When I smell it cooking it nauseates me.
