What are typical speeds expected (I guess I'm asking, what's the speed difference) between EDGE and WCDMA? Obviously WCDMA is faster, but by how much?

WCDMA is part of HSDPA HSUPA HSPA HSPA+ 21mbps and 42mbps

I went to Puhoi today (WCDMA 900 Extended coverage area). I received a 3G signal on my phone, but other than that John, should I expect to see something different on the display, or does it just act like regular 3G coverage?

Why the difference between normal/extended coverage anyway? Sorry if that's a newbie question :(

Yes Puhoi is a 3G 900mhz area

Extended 3G is the Vodafone Branding for 3G WCDMA 900mhz

And you will see nothing different on the handset between 2100mhz and 900mhz 3G

but

Vodafone NZ this morning turned on new 2G / 3G coverage West Coast of the South Island

Punakaiki 2G 900mhz / 3G 2100mhz

Yep, I got the notification this morning too

Yesterday morning 3G at Manapouri West Arm went live to customers, another 2100MHz site serving the warf area, out into the lake a bit and hopefully not irradiating the pet keas at the power station control building.

Now based in Perth WA.
