Linux: @neb start another thread and SparkNZ do not offer WiFi calling so not sure what you are on about to be honest!
Moved to this thread. And if Spark doesn't offer WiFi calling then someone needs to tell either my phone or Spark that:

Your handset prompting that VoWiFi calling is available is probably cause the phone isn't ACTUALLY checking if it's there or not and probably received no carrier bundle to do so.

I'd actually pick up a 2D sim to test as their VoWiFi is a bit more mature but it may end up not doing anything so it will be a waiting game.

To actually add something more to the thread I have noticed that VF VoWiFi is extremely picky and does not like my Poco F3 yet I have VoLTE(I am guessing I am missing something from VF's side for my specific handset but my handset is not listed).

Friend of mine uses 2D WiFi calling (sorry, thought it was Skinny but it's 2D) from a no-signal area and it works fine.

Correct WiFi calling does not require any signal from the mobile network to work
