Which is why I posted my issue on an official MS Support channel.

Just installed the update via regular channel. Immediately upon reboot I note that my Synergy service cannot start with error:
synergys.exe: no configuration available
Cheers, Windows Update! You managed to erase a configuration file for Synergy for no reason whatsoever.

Finally sorted, one Windows Update successfully deployed from WSUS to Windows 10 1703
For anyone who needs to know the solution, the answer is in that Microsoft Technet thread.
Now I can move on to testing our applications.

The Start menu on my laptop is being a pain, I can resize it vertically but cannot resize it horizontally. The trackpad is also a pain, moving the cursor is fine but two finger scrolling is horrible, it is either "sticky" or scrolls way too fast no matter what setting I am using.
Home PC announced it was updating itself this morning.
Seems much the same, a few extra apps and settings dotted around. I had to rejoin the homegroup. Other than that, it's fine.

You need to download & run the Windows 10 Media Creation Tool.
I like the updating message, Don't turn off your PC, this will take a while. Off and on its taken 2 days so far. If I try updating online it gets stuck at 14%, if I try updating via ISO it gets stuck at 19%. Have tried disconnecting unnecessary USB stuff, disabling (though not removing) antivirus and disconnecting from internet while updating. Any other ideas before I maybe try some of the more involved fixes suggested ?

Took a virtual copy of my physical Windows 10 laptop running 1511 and performed a test upgrade to 1703 using the Enterprise ISO (and system was offline)
Just as @nathan had mentioned, it did not reinstall all the Microsoft Apps I had removed (though I did add in all the new apps that were introduced into 1703); however nothing else went to plan and so I abandoned the idea of doing a real update of my physical laptop and when the time comes, and will opt for a new installation using my custom MDT environment.
