I stand corrected. Tbf I’ve always bought at the counter and the item gets scanned there and then so I assumed everything was scanned before leaving the building.

That's what I usually do. The manager told me to skip the line (because of the prepaid label) and put it on the front desk, they'd always scan it by the time I got home.
Handle9: I really have no idea what anyone thinks a theft complaint will do. The police will tell you to get lost and stop wasting their time. They don't get involved in commercial disputes.
It would allow the OP to claim on their Home Contents Insurance for a start.

NZ Post have "proof" that is was never accepted by them .
You have zero options unfortunately.
NZ Police will do nothing, even when presented with clear evidence of ongoing mail theft and evidence of those involved (was in the weekends paper)
BUT, keep using the tracking page & keep checking it
Even if its flagged as missing, NZ POST will do nothing if it suddenly gets scanned in somewhere (from experience)

Agreed with this, your only option would be to follow said courier driver find where they live and break in and steal your item back if it is still there.

NZ Post say they have no CCTV, but if you get the cops involved they can get CCTV firm any nearby businesses.. Possibly footage of you walking in with the package and walking out without it?

I wouldn't expect anything more from the police than taking a statement and giving you a reference. They're probably not going to ask for CCTV footage and they definitely aren't going to try to obtain a court order to get it.
As @Handle9 said, contents insurance covers items temporarily outside of your home, not items being shipped. On the other hand, NZ Post swears they never received the package, and therefore the item was not being sent by courier. There are essentially two reason to file a complaint. The first is to obtain a reference number and hope your insurance company agrees the item was covered (IMO, despite suggesting this, I think it's unlikely), and two, to ensure any potential theft is recorded and may be used as evidence in the future should a pattern emerge. If crime isn't reported, people will get away with it.
