Fruit cakes are disgusting. But panettones are yummy. Hot cross buns are ok.

Just why, is peel a way to use up whats otherwise garbage ?

 

 

Peel isn’t garbage - to many people much of it is perfectly edible when cooked and citrus peel is fundamental in marmalade. I love marmalade.

 

A lot of fruit and veg have a significant proportion of their vitamins and goodness in, and just under, their skins - but many people peel them and chuck the peel away. The nutty flavours of many roast veg skins (eg. potato, kumara, pumpkin) are the tastiest part.





Sometimes I just sit and think. Other times I just sit.

The cinnamon/allspice.  I like those spicy windmill biscuits from the Netherlands as well.

 

The crispy outside dripping butter. 

 

The soft chewy inside - even better if it's brioche.

 

The sweet moist plump raisins inside.

Anchovies.  Few pizzas are complete without them.  But the Margherita is one pizza I do believe should be respected as a classic.

 

I make Malaysian a inspired pizza with sambal, chilli, achar, ikan biliis and roasted peanuts on a roti base.  I even crack an egg on top of it.  How's that for sacrilege!

For me, using the classic Margaherita as an example a thin, slightly crisp base is essential.  Then it's the simple contrast between the tangy tomato sauce, the creamy mozzarella and the aromatics cutting through from the herbs.  Three simple bold flavours.

I think until you have tried Rocket Kitchens ones in Mt Eden in Auckland, then you haven't had the gold standard of bought ones (in my experience). I have had other good ones, but none as great as RK to date. 

 

I've also made pretty decent ones. 

 

Butter is the only suitable topping.

I like them as unlike toast can heat them in microwave quicker, though I have relatives that insist they be grilled 😞 

 

Wish they were available all year long, hopefully they keep bringing them out earlier each year. 😃
