Not really a cover or remake but this seems as good a place as any. I've recently found the NPR music Tiny Desk Concerts on youtube. They are really cool and there are a ton of them.

Something moderately different from the original. I quite like it. She has a pretty powerful voice!

Even more wishy-washy than the original in my view (wouldn't life be boring if everyone had the same musical taste 😁) but certainly easy on the eye.

very few covers or remakes that stand up to the test of time.
Most are quickly forgotten, while the original lives on as popular as ever.

When I hear remakes, it usually just shows to me how good the original was & I want to hear the original instead.
Honestly, it erks me the amount of radio time cover versions get . Often that band had run out of ideas & released a cover instead (eg FFDP ).

I really like this , 'Can't Let Go' . They are a cover band .

I also like the Hollies version also a cover version , better than the original .

Or basically anything from Like a Version on Triple J pretty much.

EDIT: Link helps https://www.youtube.com/playlist?list=PLCC51BF0C94BE62E8

I haven't found an parallel for Triple J in NZ so far so my smart speaker in the kitchen streams it from the moment I wake.

I made a whole playlist of covers after going down a epic cover rabbit hole.   Pop songs boosted by movies theme music.  Was a bit of a gas.

That list should keep me quiet for a bit.

...depending on where the volume dial is situated of course.
