For the benefit of people that want to choose an ISP for UFB, and already have a router that may not support VLAN tagging, I've decided to maintain a list of the various ISP requirements.
Without further ado, here's the information that I have:
ISP: VLAN Tagged - Authentication - Voice
Contact: Yes - DHCP - RGW [3]
Inspire: No - PPPoE - RGW
Megatel: No - PPPoE - RGW/ONT (see post)
Mercury, Now: Yes - DHCP - ONT
Nova: Yes - PPPoE - RGW [3]
ElectricKiwi Broadband: Yes - DHCP [4]
Vetta: Either - Either - RGW
Quic: Either - Either
Sky: Yes - Either - ONT [4]
Simply Broadband: Yes - DHCP [3]
Spark: Yes - Either - ONT
Skinny, BigPipe: No - Either
One NZ: Yes - DHCP - RGW
Vivid: No - DCHP (PPPoE available by request)
Voyager: Either - Either - RGW
WorldNet: No - DHCP - ATA
2degrees, Orcon, Slingshot: Yes - DHCP - ONT [1]
2talk: Yes - Either - ONT
There are other ISPs that I haven't looked at, and there are still a couple of incomplete entries. Can anyone supply any more details?

[1] ONT for new connections, but existing customers may be on RGW.
[2] ATA is apparently separate from RGW; see page 4 of this thread for some more detail.

Legacy Orcon voice details are available here, although the MAC address changes are not required.

Starlink (Priority, Mobile & Maritime plans can get a Public IP)
Most 4G Broadband providers (opt-out if asked, usually)
