@sdavisnz the problem is some router (such as the Edgerouter X) are reliant of the CPU doing all the heavy lifting with NAT while others have hardware NAT (a dedicated CPU to handle the heavy lifting).
You're looking at around 500Mbit with the Edgerouter X vs 1Gbit with the Edgerouter Lite for example with basic IPv4/v6 PPPoE NAT. Other cheaper routers may have a gigabit switch but are internally connected to the CPU at 100Mbit. It depends on the router, and it hard to judge on what a router can do without testing it out.
