Are you using Shellys at all ?

No, but I am happy to. I just need to make sure it's all going to work the way I want, and find a sparky who knows about then. I've tried our usual and another recommended one and both didn't want any part of it.

Where do you live? I would be happy to help you install them (qualified registered electrician in Auckland), I have a few in my house already.

Just to follow up,

I ordered a C clip, Easifix box (and a PDL box, but I knew that would work), and they all fit the Iconic plates no problem.  I can't easily get the low voltage mounting brackets I wanted, but those other options will work just fine. I think I will just go with the PDL mounting boxes, as the screw fixing looks close enough to the edge that I can easily screw to the stud at an angle. And the other options both look like they would work fine where there is no stud.

I decided to put some small orders in with different companies to make sure they were legit and to test the service, these were:

Electrical Direct and Lighting Electrical Supplies

I ordered late Thurs night, and received both the next Monday. Both seemed to have good service, items in stock and posted quickly. Lighting Electrical Supplies were a bit cheaper and had a bit more range. They sold the ethernet ports in packs (Iconic grids AND face plates), whereas Electrical Direct didn't seem to stock the packs. But I would happily use either again. In fact, now I have tested the shops and the gear, I'll put in a bigger order.

And just to say, now I have some actual Iconic plates in real life, they do look very nice. I decided to go with the official PDL keystones, and they just pop very nicely into the grids, and look good with the plates on.

I can't wait to get all these things installed!

My most recent orders have been through Showtechnix, but I've also ordered through KiwiSparks and Electrical Direct. No complaints about the service from any of them.

What amperage should a light switch be, 10a or 20a?

The PDL Iconic plugs are 10a, but the PDL Iconic only seem to come in 20a light switches
https://lightingelectricalsupplies.co.nz/index.php?route=product/product&product_id=50

My understanding is that a higher rating (20a) is OK to do.
