I have a spare FritzBox that I have set up as an access point at one end of the house where coverage was a bit spotty.  It seems to work fine - I have it set to fixed IP 192.168.178.4, DHCP off.  The "master" router's DHCP range starts at .20.  The spare FritzBox is wired-connected using one of the four "LAN" ethernet ports to one of the ports on a 24-port switch that is wired-connected in turn to the master Fritzbox.

My question: Should I expect to be able to use the remaining three LAN ports on the spare Fritzbox to connect wired devices, as they don't seem to work!?

They ought to work if the Fritz is setup correctly. The Fritz routers I've seen recently can be put into AP mode, which is what you want in this case.

Yes it should work - You need to setup your FB as an IP client. See info here - https://en.avm.de/service/fritzbox/fritzbox-7490/knowledge-base/publication/show/3244_Setting-up-the-FRITZ-Box-as-an-IP-client/

Thanks for the comments.  My FB (7490) seems to differ a little from those instructions, but importantly, there is no "operating mode" setting on the "Network Settings" tab.

I'm wondering whether the ISP (2d) has somehow locked the FB down to make it less useful in situations other than direct connection to them.

Are you running the latest firmware? 2degrees don't change or lock down the FB's. I've used this on 4 different 7490's via 2degrees.

Bizzare.  Firmware reports as 06.52.  FB Web shows 07.12 as available so I updated to that, and bingo - I now have an "IP Client" option.

I shall report back...

Updated FritzBox to 07.12 and it now works as wanted, with wired and wireless access available.  Many thanks to all for their help.
