I have created a new Contact folder in my Outlook program called "Sony Ericsson T610 Contacts" and would like to sync my phone with this new folder so as to not disturb my current contacts in Outlook. Is there a way to designate my Bluetooth syncing program to sync with this new folder, or does Bluetooth automatically sync with the default Outlook contact folder?

The built in bluetooth PIM synchronisation on Widcomm drivers will sync with the default Outlook Contact folders. If you're using XTNDConnect (see this article) you have the option of selecting records based on some criteria. You can use this, but still only with your defauit Outlook Contact.
