I have been looking into meshtasic but there is also meshcore, I'm not sure wtich one to go with should I go with meshtastic or look more into meshcore?

Note that around half the nodes will not appear on the Meshtastic map. Only nodes that are both sending a location and have opted in to MQTT will show there; the rest are present on the mesh, but not on the online map.
This is probably a more up to date map for Meshcore in NZ. Coverage from Walkworth to New Plymouth now, along with the traditional strongholds in Waikato and BOP. Made contact fleetingly with a node in Levin a few weeks back but it was reliant on a temporary repeater on Mt Taranaki.
My devices arrived, 2xT1000e and a Wio L1 Pro. Have set the L1 Pro to Short Fast in Auckland and picked up a few nodes. Hoping to use the trio to communicate when we go skiing, lets see how that goes.

There are some disparate mesh networks around.
I would recommend participant based siting rather then putting all your eggs in one basket and relying on WISP's, which are a sunset industry.
Personally I am directing my off grid comms into amateur radio but happy to discuss siting gear at our place.
