My money's on wearables being available on e-sim before summer. This is based on no evidence but it does make sense to launch something like this as people go out and about during the summer months.
A quasi-update: I emailed 2 Degrees enquiring about getting an ESim for my new Apple Watch, since they sell Samsung LTE-enabled watches. After several days their email said, "sure, but only in-store." So I waddled down to Lynnmall and the 2 Degrees shop. The staffperson initially shot down my request until I showed him the email and conferring with one of his colleagues. He first assumed I wanted an ESim for the iPhone itself, but after I corrected him he nodded, furiously keyboarded, and gave me a new Esim (and the requisite physical Sim required to activate an eSim. Even waived the usual $5 charge for the Sim(s). "I can't guarantee it'll work today, but once our system can enable this, you've got your Esim ready."
Watch app still says "2Degrees does not currently support Apple Watch" so there's no way to activate it at the watch level, yet.

It won't work as it requires an activation service on the carriers end, known as an entitlements server.

I will probably just move to Spark and have done with it - how do they compare to 2D for mobile?
I assume these days their support is equally dismal, their coverage slightly better and their pricing around the same?

Ugh - I just looked at Spark options and they are not looking great either. Their Carry-over plan gives me *half* the data I get from my equivalent 2Degrees plan and the next one up - Endless data - is about to go to $70 per month which is $25 more than my current 2D plan (which to be fair to 2D, is perfect for my needs)
FFS... Get it together NZ Mobile providers.
A few months ago ago I considered moving to Spark to get Apple Watch eSIM support, but found that for my usage it would work out to be much more expensive. For reference, I use about 15Gb per month and wouldn't get any value out of the Spotify freebee.
I'd suggest waiting for One to launch Apple Watch support as it's looking likely to happen within the next month based on material on their web site and comments from Jason Paris.
Yeah getting tired of waiting too. There’s a banner on One NZ’s home page showing Apple Watch support is coming soon, Spark is too expensive so will probably end up moving across.

The pricing has been set for One NZ. I am paying $5 a month for One Number. I would be very surprised if they differed from this with the Apple Watch.

I remember when it launched with Spark, it was timed around an iOS and watchOS update. With the timing of the banner on their website, comments about it launching soon, fingers crossed it’s part of the 17.1 update (and corresponding watchOS 10.1 update) which is meant to be released to the general public in about ten days or so based on a recent MacRumors article.

I'm going to be in Asia next year for 4-6 months but will require my NZ number for banking 2FA. I currently have a 2degrees prepaid eSIM and my existing phone only has a single physical SIM card slot. What are my options in the unfortunate event I were to lose my phone or it were to go faulty?
