I couldn't find a way, and even a Root-assisted Tasker task couldn't kill it (it did, but then it just started up again).

defnz: Is it possible to stop it from vibrating on outgoing messages? 3 vibrates every time I send a message on my S2 gets a bit annoying :pSeconded.

Implementing a "Sign Out" button is not as easy as it sounds, but at any rate - you did manage to kill it, according to what you're saying. What made you think it "opened back up"?

Are you using a customized ROM, or stock ROM?
We haven't encountered any complaint before about the inability to force-kill Viber's task in Android's take manager (nor Viber simply not appearing in tasks).
The fact that the notification icon reappears right after you kill it using Tasker just means Tasker isn't doing its job properly.
