I'm replacing my small church's broadband and phone with skinny and 2talk.

I think I've found the master jack - would it be enough to disconnect the Chorus line, and plug my VoIP adapter into the master jack with a RJ11 to BT cable?

Yes, should be fine. As long as the Chorus line is disconnected, you can connect to any jack, doesn't have to be a master. Even better if you can rewire everything for 2 wire...
