anyone know how to do this?

You don't put them into Mail directly, but rather into the separate Contacts app (Address Book in older releases). It's a system-wide list so isn't specific to Mail.

ok thanks so how do i get this 'contact app' or add the contacts somewhere on the mackbook pro?..... seems a bit stupid not having the contacts in the mail program....
maybe I'm better to download a mail program that is compatable with my contacts and e-mails from Windows mail?

Contacts is already installed. Its in Applications and called contacts.

Contacts allows you to import contacts. Would be surprised if you cannot do this with outlook contact files.

You can delete the contacts from your wifes iPhone if you want but before you do make sure that you do not have iCloud syncing setup otherwise you will wipe them off her phone.

In contacts if you go Contacts -> Preferences -> Accounts and see what services are setup.
or you can go into
System Prefrences -> Internet Accounts and that will show all the services that are setup on the computer.
Or it could just be that your wifes iPhone is setup in iTunes to sync to that computer.

There should be a blue "+" icon in the To box (when it has focus).

Might be because the email addresses did not come across or they are in fields that mail cannot understand. Mail will only show contacts with emails addresses included.
