Snap has just announced UFB plans, we can afford it, and Chorus have closed the trenches. It is time.

As I have a spare Cisco 1841, I'd like to use it. It will also be a "fun" learning experience as I'm trying to gain CCNA status. Does anyone know what sort of optical SFP will be required? (or if there are any other considerations?)

All connections are ethernet only. You have to use the LFC provided ONT.

Yes it is a 1 Gbps copper connection. If you get a tagged interface (802.1q) on the ONT, you can still play around with the Class of Service settings (either 4 or 0) on your cisco.
