im using it - it syncs with my exchange account fine which is what i primarily use it for - work email notifications. i also have it loaded with my hotmail and gmail accounts and so far they work fine too.
difference is i have all syncing done manually, as and when i need it - so i just enable data, then jump into the app. the spinny icon thing starts spinning immediately without me having to refresh, and in about 5-15secs all email is downloaded and updated depending how much there is
i actually had problems like what you described, with the galaxy tab versoin of the email.apk - that one would not download emails that i knew were sitting there (confirmed by checking webmail) and i never solved that one.
maybe its something on the phone thats interfering with the email.apk. remember back there was that problem where the camera app (or gallery app) affected the email?? or something weird like that? reflashing one seemingly unrelated app fixed the other. cant remember the specifics but it was a real problem

I tried it a few days ago myself, and really liked it! It has an amazingly sharp and clear UI, you really notice it after samsung's roms (and the customised variants).
In the end though, I had to quit it: it is still buggy (a few to many force closes on things that worked fine on the usual roms), and even some of the built in apps - like the camera. Etc.
And it still seems to be hard on the battery...
Also missing some features: can't use the front camera, no fm radio, not compatible with the JVH bootloader
(meaning you have to flash back to froyo with ODIN, etc - and all of it at risk of the precious 3 button recovery... infact, the first time I flashed it, odin froze on the PIT file!? never had that before. after 10 minutes of NOTHING from odin, I re-booted the phone - to be greeted with a funny and dreadful icon and no action (a phone and computer icon with a x or something in between). I thought I had truely stuffed everything now... But after powering it off for ten minutes, was able to get it into download mode. heart attack material! I don't think others will get the problem, it wasn't even miui yet - just pointing out ODIN is not fault free, hence why I try to avoid it or any flashing of the primary or secondary bootloader - ALL avoidable if they would update it to work with the gingerbread series bootloaders...).
I liked MIUI, but it's still very much beta. I have great hopes for it and cyanogen mod though - it's the only way our phones will be updated after samsung stops updating...
I enjoyed miui when I had the HTC Desire too; it was very stable on that device. I hope the samsung team keeps at it! Certainly a worthy project.

Ill give it a trial then, usually the 'wow' factor wears off and the problems hit you in the face eventually. Ill see if that happens. Which release of the rom were you using? Man I'm scared of Odin now.

lokhor: Strangely I've never had to use a pit file when flashing with Odin, not even when flashing the JVH stock rom.
Overlord: Hi Fellas, I've just picked up a parallell import SGS and am wanting to run it on Gingerbread. Looking through this MAMMOTH thread I see a few of you guys are running GB already. What ROM's and kernels have you guys found to be the quicked and most stable?
There's a ton of them over at XDA but I'm a relative noob so it's tough to narrow the options down....

JVO is the official version in the UK
