Typically, I remember to do something important while driving or out and about (where pen and paper or a computer aren't handy)

Anyone have suggestions on an app that will let me record a quick voice message or text, and remind me at a later, more convenient time?

Google Keep, you can set either a date/time or a location (driving past the booze shop, ping, get beer). You can either make a text note, voice or photo note.

TODOist is not bad - it also has a Chrome extension so you have quick access from your browser and a Postbox plugin as well (if you use Postbox for email).

I use Google keep quite a bit and I think it is backed up to your Google Drive?
Someone correct me if I am wrong.

Another vote for Google Keep. It also has Chrome browser app for your computer.  Syncs well between all devices.

Keep or Evernote. Evernote has a 1x1 widget you can set to start a new voice note which stars recording as soon as it opens, and apparently you can set Evernote to send a daily digest each morning to see what notes you made (haven't tried this)

Ideally an app that records a new note as soon as you touch a button/widget and has a default reminder period I guess?

+1 for Google Keep. I've been using an iPhone for the last few months but will be going back to Android primarily because Keep is not supported by Google on iOS and I am missing it dearly. It is simply a brilliant little note taking app. I love the fact you can easily access it via phone (Android!) or PC (via the Google App launcher from the google chrome store).
