I am "attending" an all day webcast next week, but I know I will have to duck out for an hour or so at one stage to deal with another issue.

Previous webcasts I've attended offer an on-demand service so you can watch when it suits, but this particular one doesn't.

Can anyone direct me to some software that would allow me to record the bit of the webcast I'm going to miss - this is very much just for time shifting, I'm not going to post the recording online or anything (even assuming anyone wanted to watch; the subject matter is pretty dry).

Google search produces a fair few results, but I'm not entirely sure of some of their bona fides.

The webcast seems to be using the webcasts.com platform if it helps.

You could use something like OBS to record your screen and computer audio to a video file.  It's free but can be a bit finicky to setup. I would also test it if you can, as sometimes capturing video in a browser doesn't work.

If you a desktop Nvidia GPU you could also try Nvidia Shadowplay.

There are other screen recording options however the free versions tend to have recording time limits or add watermarks.
