I'll be buying a new NAS (Synology) soon, and I wanted to check the best way to move the data from my current NAS (QNAP). The QNAP is a one-bay unit, but the new Synology is a 2-bay, though to start with I'm just going to continue using the single drive (second drive will come later this year).

I know I can't just swap the drive out of the QNAP and into the Synology, but is there a better alternative to copying the ~1.8TB of data from the QNAP onto an external drive, wiping my current drive, then copying the data back onto the freshly wiped drive in the Synology?

Put a disk in the new NAS and copy the data over. I would use Teracopy with verify turned on, it checks hashes to ensure the data is written correctly. I don't think there's a practical way of doing this if you only have one hard drive, unless you have a lot of available local storage on your PC.
