We have an apple TV streaming 1080p videos and also two PC gamer's that would like everything to go as smooth as possible without kicking anyone off/adversely affecting each other if possible.

Its a 100/30 unlimited Orcon UFB connection with the standard genius box thingo

You really need to understand what QoS does first.

QoS on a CPE is primarily there to shape upstream packets as that's all it can effectively do. It can't really control the packets or order of packets that are being sent to you from your ISP.

You need to look at the root cause of the Apple TV problem because QoS isn't necessarily the answer. Where is the content coming from for a start? Does the problem fix itself if you stop gaming?
