lokhor: The custom ROMs we talk about are all based on Samsung's firmware releases which include everything needed to run the phone including a specific version of Android. Typically the "chefs" will cook up a rom by deodexing the files in the operating system to allow for modifications such as themes and optimising speed by removing files intended for other resolutions. The other thing they often do is provide a customised kernel that supports such things as extra filesystems (ext4 for speed & stability), improved image quality, improved sound quality.
So basically if you want to have different themes (and this is for the status bar, notification bar etc) and also want extra speed, better image quality and better sound quality then there is going to be a custom ROM that will fit you.
Typically if you start with a stock 2.1 ROM it's pretty easy to upgrade to a custom ROM and you never have to use Kies or even Odin again (unless things go pear shaped).
This guide tells you how to do a clean install - it would pay to read through all of the different options. if it gets confusing you can ask here.

So these custom ROM that Darky etc cook up are changes to the kernel?
And I take it a good analogy around kernals would be Samsung Android Software is to Ubuntu 10.10 as Motorola Android Software is to FreeBSD?
Do these custom roms, mean you need to reinstall apps? contacts? sms?
