Am thinking of upgrading my projector to a projector with an HDMI port or maybe 2 HDMI ports one for my PS3 so the kids can play it on a huge screen. And one for when i get My Sky Hdi.
I would love to watch sports on my projector.

One problem i have is will i lose much quality over a long distance of cable say 10 to 15 metres.
Can i use Cat5e cable with hdmi wall plates or something like that?

No, you won't lose anything over a 10 metre HDMI cable. They're cheap (don't be sucked into buying an expensive one) and 10 metres is fine. I personally just installed a projector with the cheapest 10 metre HDMI cable I could find and it's perfect.

If i get a projector with only 1 HDMI port would i be able to plug one end of an 10 metre HDMI chord into the projector and the other end into a switcher so i could have my sky in one port and the ps3 in the other port without any quality loss or maybe a little bit

Yes.

I actually have to go the other way, I have a TV and a projector I want to drive from the single HDMI output on my amp, so I am waiting for an HDMI splitter to arrive.

HDMI switches (like you need) are more prevalent and work pretty well... the only thing to watch is that because of HDCP and the negotiation between devices, sometimes you may need to turn units off / on to force the correct resync. (Many HDMI switches though work well in this regard and you don't have the issue - I have no idea which ones would work)

Price won't be a perfect indicator either - I bought a device from Dealextreme for about $45 NZD which a NZ retailer is selling for about $200 - so price isn't always a good indicator of quality or features.

You could always buy from DSE, they have a very good return policy.

So it looks like what i want to achieve is quite easily achieveable without any video loss or near no video loss

Projectors do not have speakers.
If you are going to use a receiver for sound then there are options to purchase one with multiple hdmi outputs etc to avoid the need for splitters altogether.
