I notice that Telecom now recommend using _only_ the "wap.telecom.co.nz" APN on Android devices and assigning the data, mms and gps protocols to it.

How does this now differ from internet.telecom.co.nz that was used previously? (Or the, I believe unproxied, direct.telecom.co.nz).

I tried to turn ON 'internet sharing' on my Nokia Lumia 720 yesterday which had automatically picked up the wap.telecom.co.nz off the SIM/Network and it would not work. I had to manually add another APN with internet.telecom.co.nz and internet sharing worked fine after that. Not sure why it has decided to stop working on the WAP APN.

Do whatever you want to do man.

wap.telecom.co.nz is the WAP Gateway APN, but you should be able to get normal internet access through that APN much like the "internet.telecom.co.nz" APN.

Yes - internet sharing with wap.telecom.co.nz works fine. I will see if I can find a Nokia device to test with here - I suspect it's a device thing.

I've got access to a range of Nokia devices if you want me to run some tests ... ?
Can also run tests using a variety of Android/iOS devices as well if required.

You will be fine to use the standard telecom APN configured on your device (wap.telecom.co.nz). There will be no difference (speed, connectivity, etc), unless you are trying to run a specialist application - like certain VPN clients).
