Can you get Enable UFB Enable via bigpipe and leave an existing Spark/Chorus POTS line going into the house untouched?

Bigpipe is not doing Enable UFB at the moment. It's Auckland only for now.

If they install Fibre into the house, they're certainly not going to dig up the old copper and take it out....

Unless the copper is overhead and they can only get the fibre in that way, they will have to remove it then.

The copper will just be disconnected, no biggie.

Existing copper is undergrounded. There needs to be no interruption of service on the copper. As in that phoneline needs to never stop working during the fibre install, hence asking if it's possible.
