So i haven't actually done this yet, but i a thought came into my head. Say i transferred my number to XT or 2degrees, what happens to my on account plan? if it doesn't have a number anymore?

A number port will deactivate that connection prepay / Postpay and if the account has one connection it will close the account as well

You will be charged disconnection fee's (if applicable) and sent a final account assuming you only have the one mobile on that Vodafone Account.

what if I move my number to Telecom because my new company will pay the bill but I'm only 6 months into a 24 month plan and want to keep it active so I can move my partners number on to my old vodafone plan?

Can I move her number onto my old plan and avoid the disconnection fees as I will keep the plan running?

"On a plan" means you have a term contract with an early disconnection fee? Then you will receive a final bill for the last month expense PLUS the fee to have your contract terminated.
