I am learning my way around Thunderbird on Apple OS. I notice character encoding in message headers is wrong so - for example - an apostrophe comes out as ’ . How can I fix this?

E-mail headers do not support HTML character encoding. If you view the message source (Ctrl+U) and find the Subject header, I  expect it will be exactly as Thunderbird displays it. If so, Thunderbird is displaying it correctly and it's the subject that is incorrect.
