Are you talking about sports betting or casino betting?
For sports betting, there's a few to choose from:
plus a number of Australian sites (won't list). The Aussie sites you have to scan and email ID confirmation. Some also won't pay out to your credit card so you'll need an Aussie bank account.
There are some lucrative signup offers - bet365 have a good one. Google "matched betting" and you can see it's a low risk way to make some money but does involve some work.
For casino betting, most sports sites also have a casino side - again look at the first three. The aussie sports sites don't have attached casinos.
www.paddypower.com is good for blackjack as they they have good bonus offers and promotions specifically for that game.
You can't do matched betting with casino games however through use of their promo offers you can work out which offer provides a positive EV (expected value) and go for those. Not guaranteed a return but in the long run should provide a positive return given that you're just trying to milk their promo offers.
For example, paddypower had a live blackjack deal. 10 pounds bonus money plus special cards scattered in the deck which provides bonuses. I ended up GBP5.00 pounds up (EV was 9.50 but I was still up), plus 15.00 free sports bets and another 10.00 live casino to use the following day. I can convert that 15.00 free sports bet at around 60% winnings by dutching it on another betting site
Watch out for their rollover requirements, especially when blackjack is scaled back (5-10% or rollover requirements). Have to avoid those as the maths just doesn't work out.

I don't know much about sports but with matched betting it's all about the freebies and the numbers - the players/sport is irrelevant. I've bet on tennis is Russia, basketball in Spain, football in Korea.
Forgot to add that most sites don't support NZD - Bet365 and Betvictor do among a handful of others. When betting in GBP or EUR you'll take a hammering on the exchange rate and credit card fees when converting to other countries and some sites will take a deposit via credit card but may have trouble paying back out to your card so they will transfer the funds back to your NZ bank account - more fees there.
There's also computer based betting and live casino betting. The live betting is just like in a real casino with a live dealer across the other side of the world and there are opportunities for some card counting in BJ as they use an 8 card shoe but do shuffle more frequently.
Also, check the T&C's, check them again and finally once more.
I'm surprised there aren't more replies here however figure most GZ here realise that gambling is a mugs game and everything is stacked in the house's favour - the one exception being the bonus bagging.
Thanks, I guess it pays to stick to NZD accepting sites then, is there any advantage to using sites which don't take nzd? I assume there are no nz based sites.
