I would say about 10%, just because the drives tend to spread the writes across the chip to make it last longer. I ran my 90GB SSD to 80% without the slightest slow down :o)
I think it depends whether the drive supports TRIM or not. SSDs in RAID, for example, do not support TRIM, and there was a certain amount of free space that you were supposed to leave on them (I can't remember exactly). I think the same goes for single SSD configurations using an older drive that does not support TRIM.
