Is dell axim x51v capable of viewing video files in landscape (full screen) mode like the hp hx4705?

Yes it will be able to do it. Just have in mind that if the video is not made for higher resolutions (VGA on the hx4700 and Dell Axim X51v) then you will see it quite small.
