Never heard of Xpress Courier but I got this from Telecom the other day when I question them about shipping (tl;dr Telecom is sending them via. CourierPost):
"I am pleased to confirm we have received your iPhone order, however this is on hold until the official product launch on Friday.
Once your order is provisioned, it will be dispatched via CourierPost and you should receive it early next week. We will email you to confirm when the phone is on its way.
If you would prefer to acquire an iPhone sooner than next week, you are welcome to visit a Telecom store from Friday which is when they officially launch on the NZ market. If you would prefer to purchase one from a store, please advise and we will cancel your online order."
Has it been seen anywhere if there a limit on how many you can order at once? Both myself and the partner want one but she is away for the weekend in the middle of nowhere. So it'll just be me lining up. I'm talking about instore from telecom here.

Quite true. I would like a black 32gb for me and white 16gb for the partner. Would probably settle for 2 16gb tho. Just haven't been able to find anything about it on telecom or vodafones websites about it.

Not sure about in store but I would say if there is enough people there that a limit will be put in place. As for the Apple Online Store there is a limit of two per person.

What time would you suggest for queuing at Christchurch ^^. Looks like demand is low or maybe just no one is there yet.
I'd say most people are just ordering online or haven't turned up yet. It would be disappointing for the carriers if only this amount turned up considering all the free stuff being put out and the live entertainment, etc.
