Just out of curiosity, is there any difference between iPhones purchased from NZ carriers and from retail stores or online from Apple? I know that none of the carriers lock iPhones to their network, but is there anything actually different about one brought from a carrier as opposed to one from Apple Online Store? I know with Apple controlling everything (including software updates) there isn't really any noticeable difference, but is there any difference at all (like Safari home page defaulting to carrier home page like I've seen on Windows Phones, preloaded carrier profiles etc)?

No difference at all. There are no carrier specific customisations.
