It depends on what channels you want to watch. If it is simply Sky & Freeview from Optus D1, then an 8 way splitter will more than likely do the job just fine.
Anything more than that, you are going to need a multi/dual output LNB, and a multiswitch.
For Sky and Freeview one dish will be fine - provided it is of suitable size (60cm-ish sky size is fine), has a decent LNB (not cheap trademe specials) and is aligned correctly.
1) Only split in one place so that each signal is even.
2) Use an all ports power pass splitter.
3) Use compression or radial crimps - NOT twist ones - or the 'Belling-Lee to F' plugs that DSE sell!
4) Also - depending on the receiver; don't tune one in while others are connected, just tune one at a time. If one receiver is connected and running, it sends 18v (for horizontal signals) to the LNB and the second receiver may scan the 13v (for vertical signals) but will be receiving the horizontal signals (18v>13v) - If the first receiver is turned off or unplugged, the second receiver will still be sending 13v and get no signal.
