I have set my Start and Finish Offset to Off, I previously had it set to start 5 min before and end 5 minutes after, but I found if I recorded two different channels after each other, it would cut off the last bit of the first recording.
Now it is still either cutting off the first minute or the lasr minute, which is really annoying, as you never get to watch a complete episode of anything

Any suggestions?

Yeah, I noticed that as well - not sure why we need the extra 5 mins before or after. I haven't experienced it myself that the time gets cut-off if 2 programs are happening after each other, but I imagine I'd get the same thing.

I've currently set it to record 5 minutes before and after.

In order of decreasing effectiveness:
Get a twin tuner box.
Go back to having recording margins and live with the occasional clipping.
Complain to broadcasters about keeping to schedule.
