I had to do a factory reset on my Desire. Prior to the reset I had my text messaging set up where the messages were displayed in "layered" fashion where I could scroll through them using my finger. I have lost this and just have the message icon which I open to read them, but want to go back to how I had it. Any help greatly appreciated, thanks.

I don't have any different display options on mine either. I have the default view where I see a list of people I have sent or received from with a partial preview of the latest message. When I select a person I see a timeline of messages. Is that what you have and don't want?

I had different options when I was using Chomp SMS. Which I stopped using when it started to not send texts. Most annoying when you are trying to meet up with people.

Find a space on your screen somewhere then long press on it, go into widgets and scroll down to messages (HTC)
