Does the way you select text differ between different manufacturer interfaces or whatever they're called?
Or is it actually on an individual app level? I know it's not OS-wide like in iOS

You can always download a different keyboard with different input methods from the market. I am currently testing the 2nd Beta for Swype for Android which is very good it just annoys me that I have to re-enable it after every boot.
