Im trying to do this step
Hold down volume up and down buttons (both volume buttons down) and press the power button. The screen should go purple to show you are in bootloader mode.

but it doesnt it keeps going to a black screen with applying firmware update which seems to be a generic huawei 2.21 update.

I even renamed the update.zip i found on the sdcard thinking that might stop it but it doesnt.

Im trying to flash the new recovery and roms form here and need to get into bootloader

Guessing this is on an X5 from the link. Is there a folder named dload on either sd card or internal memory?
*Edit* if you have a working, rooted 2.2 rom on your phone, you can also follow these steps from a thread on xda: http://forum.xda-developers.com/showthread.php?t=1420728
3) Copy the recovery.img from computer to your SD Card.
4) Using Remount mount the .cust_backup/image folder as RW.
5) Using ES File Explorer or File Expert copy the recovery.img from the SD Card to .cust_backup/image (replacing existing)

May be able to just use root explorer or ES file explorer in root mode to just do the copy too. 
Make sure to backup the current image though before doing anything.

I have renamed the recovery.img that is already in there and placed my new one in but on reboot vol up etc it keeps going to the std android recovery.
Cant see how it can! it should be using the new recovery i loaded.
